Are Double Chocolate Protein Muffins the Ultimate Post-Workout Snack?

This recipe is very versatile and can be modified to make many different variations. You can omit the cocoa and add walnuts for banana walnut muffins or skip the cocoa and add blueberries or raisins. I’ve made pistachio cranberry variations and cinnamon raisin. The options are endless! They’re low calorie, delicious, high protein and so easy to make.


Ingredients:

1 large egg

64 grams Lily’s Milk Chocolate Chips

32 gram, Monkfruit sweetener

4 ounces, Greek Nonfat Yogurt, Plain

43 grams 100% Unsweetened Cocoa

159 grams Kodiak mix

3 very ripe medium bananas


Instructions:

Preheat oven to 350 degrees.

Using a blender, combine bananas, yogurt, egg, & sweetener. In a large mixing bowl, combine Kodiak mix, chocolate chips and cocoa. Slowly pour the blended mixture into the dry mix until combined.

Distribute mixture evenly in a muffin pan to make 12 muffins.

Bake for 30 minutes or until a toothpick inserted comes out dry.

These are great reheated in the microwave for 15 seconds or just eaten at room temp.
