What I love about this recipe:
It’s easy, delicious, versatile and super healthy. It’s high in protein & fiber while still low in fat. It uses several of my pantry staples which is how I came up with it on a whim! I also love that the blended beans paired with cauliflower lend a very creamy texture without any added dairy or cream. Cannellini beans are magic and you can’t even taste the cauliflower!
Cara’s Creamy White Chicken Chili (with easy vegan substitution).
This dairy-free, super creamy & delicious chili is the easiest thing you’ll ever make and will become a staple recipe!
Makes 8 servings
850g (2 bags) frozen Cauliflower
425g (1 bag) Frozen Corn
4 oz, (1 can) Green Chilies
1 oz Chipotles in Adobo Sauce (more or less depending on how spicy you like your chili!)
4 (15.5 oz) cans Cannellini Beans (liquid included)
15 fl oz, Water (more or less as needed)
16 oz, Ground Chicken (substitute ground turkey, pre-cooked chicken breast or for a vegan option, omit the meat in favor of 2 extra cans of beans)
Optional – Chopped avocado, tomatoes, shredded cheese, cilantro, chives or other favorite toppings.
This dish is prepared all in one pan and can be emulsified with an immersion blender or blended in a standard blender then poured into a pot for final assembly & preparation. Directions for both options are included below.
1. Microwave cauliflower until soft (about 5 minutes per bag).
2. Brown ground chicken until cooked though. If using an immersion blender, temporarily transfer the chicken to another container after browning. If using pre-cooked chicken or preparing the vegan option, skip this step entirely.
3. Combine cauliflower, only 2 cans of beans including liquid, & chipotles in adobo for blending. If using an immersion blender, you can do this right in the pan with the heat on low. If using a standard blender, I recommend splitting into two batches for blending then pour over the browned chicken to combine.
4. Add all remaining ingredients (the other 2 cans of beans, corn, chilis & water as needed). Simmer until heated through
5. Top with chopped avocado, tomato, cheese, cilantro, or any other toppings you may enjoy.
6. Serve warm & enjoy!
