Sweet Potato Cheesecake Treat

Ingredients:
· 0.50 tsp(s), Vanilla Extract
· 0.25 tsp, Pumpkin Pie Spice
· 170 g, Sweet potato, baked & cooled
· 2 tbsp(s), Powdered Monkfruit Sweetener (or non-caloric sweetener of your choice)
· 170 gram(s), Nonfat Plain Greek Yogurt
· 1 tsp, Cinnamon
To prepare, thoroughly mash sweet potato and add vanilla, pumpkin pie spice, & cinnamon. Then, using a fork or an immersion blender, add yogurt & sweetener.
Serve cold & enjoy!
What I love about this recipe:
It’s deliciously indulgent and so easy to make! Plus, it’s a great way to use up leftover sweet potatoes which is how I came up with in it in the first place! Leftovers never need to go to waste, there’s always a creative way to use them while staying healthy and this recipe takes no time at all to whip up.
Note: I have substituted blended (whipped) cottage cheese in the past and there is no discernable difference so if you’re out of Greek yogurt but, you have cottage cheese in the fridge, don’t let it go to waste!
